Pan-Seared Salmon with Broccoli and Lemon-Ginger Dressing

A fresh and high-protein meal featuring pan-seared salmon and steamed broccoli, drizzled with a vibrant lemon-ginger dressing.
Ingredients(serves 1)
- 1 fillet salmon
- 1 head broccoli
- 0.5 fruit lemon
- 1 inch piece ginger
- 1 tbsp oil (assumed pantry staple)
- salt (assumed pantry staple)
- pepper (assumed pantry staple)
Instructions

Pat the salmon fillet dry and season with salt and pepper.

Chop the broccoli into florets.

Heat oil in a non-stick pan over medium-high heat.

Sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes, or until cooked through.

While salmon cooks, steam the broccoli florets until tender-crisp, about 5-7 minutes.

For the dressing, finely grate the ginger and squeeze the juice from half a lemon into a small bowl. Whisk together.
